Baked new potatoes are a n easy side that can cook in the oven while you are preparing your main dish. They are also something easy to adjust to any type of meal. You want to have them Greek style just add some Greek spices, want them Cajun just add some Cajun seasoning. These go great with pork chops.
First you will need 10 new potatoes cut in half. Then add them to a bowl with 1 Tbsp of olive oil and toss until they are covered. I then put aluminum foil into a bread pan and and the potatoes. The aluminum foil will make cleanup easy. I then sprinkle the potatoes with your favorite spice mixture. For these I added one clove of garlic, a teaspoon of dried oregano and basil along with an ounce of diced yellow onions.
Then wrap the potatoes in the aluminum foil and place on the top rack of a preheated 350 oven for 20 minutes. After that they are ready to be served.
