If you have a rice cooker then rice is an easy side to add with any main course. All you need to do is throw the rice into the rice cooker and let it cook while you work on the rest of your meal. But having plain white or brown rice all the time can be boring so I have been changing my rice recipe around. This recipe is inspired by the cilantro lime rice at Chipotle but I changed it up by adding coconut milk to the recipe.
First I put one cup of rice into my rice maker with one cup of chicken broth and one cup of coconut milk.
Once the rice was finished I squeezed the juice of half a lime and then a quarter cup of fresh cilantro. Here is the finished product. One of my favorite meals with this recipe is making Mexican Rice Bowls.
